    In most beef stew recipes they want you to brown the beef in the bottom of the stock pot one layer at a time on all sides till browned. This takes forever! So here is my version.

    Ingredients
    4 pounds of lean stew meat
    olive oil

    2 onions, chopped
    6 stalks celery, chopped
    6 carrots, chopped
    2 poblano peppers, chopped
    garlic, minced
    2 t. Thyme
    2 T. Paprika? Not sure about this, we put in tons.

    green beans
    potatoes, peeled and cubed

    Drizzle olive oil on a jelly roll pan. Put stew meat on the pan and spread it out. Salt and pepper. Put in 325 degree oven for 1 hour or so until meat is browned and caramelized.

    Using a large stock pot, drizzle a small amount of olive oil in the bottom. Add onions, celery, carrots, peppers and garlic. Add paprika and thyme as well. On low heat let veggies get tender while meat is cooking in the oven.

    Combine meat and veggies. Add water to the meat pan and scrape all the goodness off it. Add that to the stock pot as well. Add green beans and potatoes. Cover with water. Salt and pepper. Cook for an hour or so until potatoes are yummy. Mash a little bit of the potatoes to thicken the broth if you want.
